Turkey and ginger stir-fry
450g (1lb) Turkey fillets cut into strips.
1 medium red onion, finely sliced.
1 red pepper, seeded and sliced
2 small courgettes sliced
2 teaspoons fresh ginger peeled and finely chopped
1 tablespoon light soy sauce
1 tablespoon runny honey or mango chutney
2 teaspoon chilli sauce
1. Heat a non stick wok or frying pan, add the turkey strips and dry fry for 5-6 minutes or until just cooked.
Remove from the pan and set aside.
2. Return the pan to the heat and add the onion, red pepper and courgettes and dry fry for 2-3 mins. Add the mushrooms and ginger, mixing well.
3. Return the turkey to the pan and keep cooking

4. Mix together the soy sauce, honey and chilli and add to the pan, coating the meat and vegtables. Stir fry, combining all the ingredients until the meat is fully cooked.
5. Serve immediately on a bed of noodles or rice.
